Sweet Potato Pie

This is a great alternative to pumpkin and so easy that I can make it. This is a great addition for dessert for the holidays.


1.5 – 2.0 Sweet Potato (about 2 large)

2 eggs

½ stick Butter

6oz Evaporated Milk

½ cup Brown Sugar

½ cup White Sugar

½ teaspoon salt

1 teaspoon Cinnamon

½ teaspoon Nutmeg

(or substitute 1.5 teaspoon Pumpkin Pie Spice)

1 Tablespoon Vanilla extract

2 8in Pie Shells


Preheat oven to 350F


Place the sweet potatoes on a baking sheet lined with aluminum foil or parchment paper. This will make clean up MUCH easier, later. Bake for 1 hour or until soft. When done, remove from oven and allow to cool. Once cool enough to handle, cut in half the long way and separate the innards from the skin. Mash and set to the side.


Combine eggs, evaporated milk, butter, sugar, vanilla, salt and spice. Beat using a mixer until smooth. Continue to beat and add mashed sweet potato a spoon at a time until it’s all incorporated and smooth.


Split the filling between the two pie shells. Bake at 350F for 45 minutes until set. A butter knife stuck in the middle should come up clean. Remove and allow to cool. Put in fridge to set up. Serve with whipped cream or ice cream or both……yeah, both!
